Why Can’t I Fry Chicken?

Ok so I really don’t get it. I am smart (I like to think), I have a graduate degree, I know how to read, I can follow instructions, hey I can even watch cooking shows on TV. So why do I have to jump through hoops to fry chicken?

Most people prep chicken and place it in oil and it comes out phenomenal. I on the other hand must try non traditional (to my cooking style) ways to get my chicken a) cooked all the way through and b) golden brown and delicious. I have tried egg whites, whole eggs, cornstarch, baking powder, rice flower, Wondra Flour, self-rising flour, and no flour recipes to name a few. My air fried wings are even sub-par.

I’m not fighting this reality any longer. I have to face it and acknowledge my shortcomings. As I bow my head in shame I think about all of the varieties of oil and methods of cooking. Peanut oil is said to be the best for frying. It is also more expensive than canola, corn or vegetable oil.

A Fry Daddy electric fryer; I thought would be they key because it keeps the oil at an even temperature. A cast iron skillet even is known to hold even temperatures. I have to get one of those.

I just need a fool proof plan on how to execute perfectly crispy and deliciously seasoned chicken.
